Ingredients

  • 250 grams Bottle Gourd (Kaddu)
  • 1 litre Full-Fat Milk
  • 100 grams Sugar
  • 2 tablespoons Ghee (Clarified Butter)
  • 10 whole Cashew Nuts
  • 10 whole Almonds
  • 0.5 teaspoons Cardamom Powder
  • 10 strands Saffron Strands
  • 10 whole Pistachios

Directions

Step 1

Peel the bottle gourd and grate it using a medium grater. Set aside about 250 grams of grated bottle gourd.

Step 2

Heat 2 tablespoons of ghee in a large, heavy-bottomed pan over medium heat.

Step 3

Add 10 cashew nuts and 10 almonds to the ghee and sauté until they turn golden brown. Remove them from the pan and set aside for garnish.

Step 4

In the same ghee, add the grated bottle gourd. Sauté for about 5-7 minutes or until the raw smell disappears and it starts to soften.

Step 5

Pour in 1 litre of full-fat milk into the pan and bring it to a boil, stirring continuously to avoid the milk from sticking to the pan.

Step 6

Reduce the heat to low and let the mixture simmer. Stir occasionally and continue cooking for about 40-45 minutes until the milk thickens and the bottle gourd is fully cooked.

Step 7

Add 100 grams of sugar to the thickened milk and stir well until it completely dissolves.

Step 8

Mix in 0.5 teaspoons of cardamom powder and 10 strands of saffron to the kheer. Let it simmer for an additional 5 minutes to absorb the flavors.

Step 9

Turn off the heat and allow the kheer to cool slightly before serving.

Step 10

Garnish the kheer with the fried nuts and 10 whole pistachios before serving.

Step 11

Serve the kaddu kheer warm or chilled, depending on your preference.
