Preheat your oven to 180°C (350°F). Grease a 9x13-inch (23x33 cm) baking dish with a small amount of melted butter.
Carefully separate and untangle the kadaifi (shredded phyllo dough) with your fingers to fluff it up. Spread half of it evenly in the prepared baking dish.
Drizzle half of the melted butter evenly over the kadaifi layer, ensuring all of it is moistened.
In a medium saucepan, heat the milk over medium heat until warm but not boiling. In a separate bowl, whisk together the egg yolks, sugar (for custard), and cornstarch until smooth.
Gradually pour the warm milk into the egg mixture while whisking constantly. Return the mixture to the saucepan and cook over medium heat, whisking constantly, until thickened into a smooth custard. Remove from heat and stir in the vanilla extract.
Pour the prepared custard evenly over the kadaifi layer in the baking dish.
Top with the remaining kadaifi, spreading it out evenly. Drizzle the remaining melted butter over the top layer of dough.
Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and crispy.
While the pastry is baking, prepare the syrup: Combine the sugar (for syrup), water, and lemon juice in a small saucepan. Bring to a boil, then reduce the heat and simmer for 8-10 minutes until slightly thickened. Set aside to cool slightly.
Once the pastry is out of the oven, immediately pour the warm syrup evenly over the top. Allow it to soak in and cool completely before serving.
Optionally, garnish with a sprinkle of ground cinnamon and chopped pistachios before serving.
Serve at room temperature and enjoy this decadent Greek dessert!
