Ingredients

  • 200 grams All-purpose flour
  • 100 grams Salted butter, cold and cubed
  • 2 pieces Egg yolks
  • 2 tablespoons Cold water
  • 150 grams Aged Gouda cheese (grated)
  • 1 piece Egg, beaten (for egg wash)
  • 1 tablespoon Sesame seeds (optional)
  • 0.5 teaspoon Salt

Directions

Step 1

In a large mixing bowl, combine the all-purpose flour and salt.

Step 2

Add the cold, cubed butter to the dry ingredients. Use your fingers or a pastry cutter to rub the butter into the flour until it resembles coarse crumbs.

Step 3

Add the egg yolks and cold water to the mixture. Stir until the dough begins to come together. If needed, add an extra teaspoon of water to help bind the dough.

Fold in the grated Gouda cheese, mixing until the cheese is evenly distributed throughout the dough.

Turn the dough out onto a lightly floured surface and knead gently a few times to bring it together into a smooth ball. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
