Ingredients

  • 180 grams Nutella
  • 100 grams Unsalted butter
  • 100 grams Dark chocolate (70% cocoa, finely chopped)
  • 100 grams Granulated sugar
  • 4 large Eggs
  • 75 grams All-purpose flour
  • 50 grams Hazelnuts (toasted and roughly chopped)
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt
  • 0 Non-stick cooking spray
  • 0 Powdered sugar (for garnish)

Directions

Step 1

Preheat your oven to 200°C (400°F). Lightly grease six ramekins with non-stick cooking spray and set them aside.

Step 2

In a heatproof bowl set over a pan of simmering water (or using a microwave in 20-second intervals), melt the butter and dark chocolate together, stirring frequently until smooth. Remove from heat and set aside to slightly cool.

Step 3

In a large mixing bowl, beat together the granulated sugar and eggs using a hand mixer or whisk until pale and fluffy, about 3-5 minutes.

Step 4

Slowly drizzle the melted chocolate and butter mixture into the egg mixture, stirring gently but thoroughly to combine.

Step 5

Sift in the flour and salt, and fold into the mixture until just combined. Add the vanilla extract and fold in gently.

Step 6

Heat the Nutella in the microwave for about 20 seconds to loosen it slightly, being careful not to overheat.

Step 7

Divide the prepared batter evenly among the greased ramekins, filling them halfway. Drop about 1 tablespoon of Nutella into the center of each ramekin and sprinkle with a small handful of chopped hazelnuts. Cover the Nutella with the remaining batter until about ¾ full.

Step 8

Place the ramekins on a baking tray and bake for 10-12 minutes. The edges should be set, but the centers should remain soft and slightly wobbly.

Step 9

Remove from the oven and allow the ramekins to cool for about 2 minutes. Run a knife around the edges to loosen the cakes, then carefully invert them onto serving plates.

Step 10

Dust the cakes with powdered sugar and serve warm. Optionally, pair with vanilla ice cream or whipped cream for an extra indulgent touch.
