Ingredients

  • 1 cup white rice
  • 2 cups water
  • 2 tablespoons butter
  • 2 cups fresh spinach
  • 1 cup fresh parsley
  • 4 stalks green onions
  • 1 cup chicken broth
  • 0.25 cup heavy cream
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper

Directions

Step 1

Rinse the white rice thoroughly under cold water to remove excess starch. Set aside.

Step 2

In a medium saucepan, bring the 2 cups of water to a boil. Add the rice and a pinch of salt. Reduce the heat to low, cover, and cook for 15 minutes or until the rice is tender and the water is fully absorbed. Fluff with a fork and set aside.

Step 3

While the rice is cooking, prepare the green mixture. In a skillet, melt the butter over medium heat.

Step 4

Add the fresh spinach, parsley, and green onions (chopped into small pieces) to the skillet. Sauté for 2-3 minutes until softened.

Step 5

Transfer the sautéed greens to a blender or food processor. Add the chicken broth and blend until smooth.

Step 6

Return the green puree to the skillet and stir in the heavy cream, salt, and black pepper. Cook on low heat for 2-3 minutes, stirring regularly.

Step 7

Gently fold the cooked rice into the green mixture in the skillet until fully coated and heated through.

Step 8

Taste and adjust seasoning if needed. Serve warm as a vibrant side dish.
