Ingredients

  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 6 cups yellow onions, thinly sliced
  • 1 teaspoon granulated sugar
  • 1 teaspoon salt
  • 1 cup dry white wine
  • 8 cups beef broth
  • 2 count bay leaves
  • 1 teaspoon dried thyme
  • 1 count baguette, sliced into 1/2-inch rounds
  • 2 cups Gruyère cheese, shredded

Directions

Step 1

In a large, heavy-bottomed pot or Dutch oven, melt the butter and olive oil over medium heat.

Step 2

Add the sliced onions, sugar, and salt. Cook, stirring frequently, for 25-30 minutes until the onions are deeply caramelized and golden brown.

Step 3

Deglaze the pot with the white wine, scraping up any browned bits from the bottom of the pan. Cook for 2-3 minutes until the wine reduces slightly.

Step 4

Pour in the beef broth, and add the bay leaves and dried thyme. Bring the soup to a simmer, then reduce the heat to low and let it cook for 20-25 minutes.

Step 5

While the soup simmers, preheat the oven to 375°F (190°C). Place the baguette slices on a baking sheet and toast for 5-7 minutes, flipping halfway, until lightly browned.

Step 6

When ready to serve, preheat your broiler. Ladle the soup into oven-safe bowls and place a toasted baguette slice on top of each bowl.

Step 7

Sprinkle the shredded Gruyère cheese generously over the baguette slices. Broil the bowls in the oven for 2-3 minutes, just until the cheese is melted and bubbly.

Step 8

Carefully remove from the oven and serve immediately. Enjoy your Panera-style French Onion Soup!
