Ingredients

  • 2 medium Cucumber
  • 2 cups Cherry tomatoes

  • 0.25 cup Pineapple juice
  • 2 tablespoons Lime juice
  • 2 tablespoons Olive oil
  • 1 tablespoon Honey
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Wash the cucumbers, cherry tomatoes, and herbs thoroughly under cold running water.

Step 2

Slice the cucumbers into thin rounds. If using large cucumbers, cut them in half lengthwise before slicing.

Halve the cherry tomatoes. If they are particularly large, quarter them instead.

Peel the red onion and slice it thinly into half-moons.
