Ingredients

  • 500 grams Jumbo prawns (peeled and deveined)
  • 250 grams Button mushrooms (sliced)
  • 1 large Yellow onion (thinly sliced)
  • 3 cloves Garlic (minced)
  • 2 tablespoons Olive oil
  • 1 tablespoon Butter
  • 75 milliliters Dry white wine
  • 2 tablespoons Fresh parsley (chopped)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Lemon juice

Directions

Step 1

Heat 2 tablespoons of olive oil in a large skillet over medium heat.

Step 2

Add the sliced onion to the skillet and sauté for 5-7 minutes until softened and lightly caramelized.

Step 3

Add the minced garlic and cook for 1 minute until fragrant.

Step 4

Stir in the sliced mushrooms and cook for another 6-8 minutes, stirring occasionally, until the mushrooms are tender and golden brown.

Step 5

Push the mushroom and onion mixture to one side of the skillet. Add 1 tablespoon of butter to the empty side of the skillet and allow it to melt.

Step 6

Place the jumbo prawns into the skillet and sprinkle them with salt and black pepper. Cook for 2 minutes on each side, or until they turn pink and opaque.

Step 7

Pour in the dry white wine and squeeze in the lemon juice. Stir well, ensuring the prawns and vegetables are evenly coated in the sauce.

Step 8

Let everything simmer together for 2-3 minutes to allow the flavors to meld.

Step 9

Remove the skillet from heat and garnish with freshly chopped parsley.

Step 10

Serve the dish immediately with toasted bread, pasta, or rice, and enjoy!
