In a small saucepan, heat the pineapple juice, milk, and unsalted butter until warm (about 45°C/110°F). Remove from heat and let cool slightly.
Add the granulated sugar and active dry yeast to the warm liquid mixture. Stir well and let sit for 5-10 minutes, or until the mixture is frothy.
In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center of the flour mixture.
Pour the liquid yeast mixture into the well. Add the two eggs and mix with a wooden spoon or a stand mixer fitted with a dough hook until a sticky dough forms.
Turn the dough out onto a lightly floured surface. Knead for 8-10 minutes by hand or 5-6 minutes using the stand mixer, until the dough is smooth and elastic.
Grease a large mixing bowl with a light coating of oil, then place the dough inside, turning it to coat the top. Cover with a clean kitchen towel or plastic wrap and let rise in a warm place for 1-1.5 hours, or until doubled in size.

Preheat the oven to 175°C (350°F).
