Ingredients

  • 4 medium Russet potatoes
  • 12 oz Smoked sausage
  • 2 medium Bell peppers (any color)
  • 1 large Onion
  • 4 large Eggs
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Olive oil

Directions

Step 1

Wash and peel the potatoes, then dice them into small, bite-sized cubes.

Step 2

Slice the smoked sausage into thin rounds. Dice the bell peppers and onion into small pieces.

Step 3

Heat 1 tablespoon of olive oil in a large frying pan over medium heat.

Add the diced potatoes to the pan. Sprinkle with half the salt and pepper, and cook for about 10 minutes, stirring occasionally, until they begin to soften and brown.

Push the potatoes to one side of the pan and add the remaining 1 tablespoon of olive oil to the empty space. Add the sausage slices, onion, and bell peppers to the pan.
