Ingredients

  • 250 g Unsalted butter, softened
  • 250 g Caster sugar
  • 4 large Eggs
  • 250 g All-purpose flour
  • 2 tsp Baking powder
  • 2 oranges Orange zest (finely grated)
  • 125 ml Fresh orange juice
  • 60 ml Milk
  • 125 ml Fresh orange juice (for syrup)
  • 125 g Caster sugar (for syrup)

Directions

Step 1

Preheat your oven to 160°C (320°F) and grease and line a 20cm round cake tin with baking paper.

Step 2

In a large mixing bowl, beat the softened butter and caster sugar with an electric mixer until the mixture is light and fluffy.

Step 3

Add the eggs one at a time, beating well after each addition until fully incorporated.

Step 4

Sift together the flour and baking powder in another bowl. Gradually add this to the wet mixture, folding gently to combine.

Step 5

Add the orange zest, orange juice, and milk to the batter, and mix until well combined.

Step 6

Pour the batter into the prepared cake tin and smooth the top using a spatula.

Step 7

Bake in the preheated oven for 45-50 minutes, or until a skewer inserted into the center of the cake comes out clean.

Step 8

While the cake is baking, prepare the orange syrup. In a small saucepan, combine the orange juice and caster sugar for the syrup. Heat over medium heat, stirring continuously until the sugar has dissolved and the mixture has slightly thickened (about 5 minutes). Remove from heat.

Step 9

Once the cake is baked, allow it to cool in the tin for 10 minutes before transferring it to a wire rack.

Step 10

Prick the top of the warm cake all over with a skewer and slowly pour the warm orange syrup over the cake, allowing it to absorb fully.

Step 11

Let the cake cool completely before serving. Optional: dust with icing sugar or serve with a dollop of whipped cream.
