Ingredients

  • 2 cups Elbow macaroni
  • 1 cup Mayonnaise
  • 0.5 cup Sour cream
  • 2 tablespoons Apple cider vinegar
  • 1 tablespoon Granulated sugar
  • 1 teaspoon Yellow mustard
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 cup Celery, diced
  • 0.5 cup Red onion, finely chopped
  • 0.5 cup Carrot, shredded
  • 0.25 cup Dill pickles, diced
  • 3 eggs Hard-boiled eggs, chopped
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Bring a large pot of salted water to a boil over high heat. Cook the elbow macaroni according to the package instructions until al dente. Drain, rinse with cold water, and set aside to cool completely.

Step 2

In a large mixing bowl, whisk together the mayonnaise, sour cream, apple cider vinegar, sugar, yellow mustard, salt, and black pepper until smooth and well combined.

Step 3

Add the diced celery, chopped red onion, shredded carrot, diced dill pickles, and chopped hard-boiled eggs to the dressing mixture. Stir gently to coat the ingredients evenly.

Step 4

Fold in the cooled macaroni to the bowl, mixing until all the macaroni is well-coated with the dressing.

Step 5

Taste the salad and adjust seasoning if necessary, adding more salt or pepper to your preference.

Step 6

Refrigerate the macaroni salad for at least 1 hour before serving to allow the flavors to meld together. If needed, stir in an extra tablespoon of mayonnaise to refresh the texture before serving.

Step 7

Garnish with fresh parsley before serving. Serve chilled and enjoy!
