Ingredients

  • 2 cups Fresh cranberries
  • 1 cup Granulated sugar
  • 1 cup Crushed pineapple (drained)
  • 1 cup Miniature marshmallows
  • 0.5 cup Pecans or walnuts (chopped)
  • 1.5 cups Heavy whipping cream
  • 0.25 cup Powdered sugar
  • 1 teaspoon Vanilla extract

Directions

Step 1

Rinse and thoroughly dry the fresh cranberries. Pulse them in a food processor for about 30 seconds or until they are finely chopped.

Step 2

In a large mixing bowl, combine the finely chopped cranberries with the granulated sugar. Stir well to coat the cranberries evenly with sugar. Cover the bowl and refrigerate for at least 2 hours or overnight to macerate.

Drain the excess liquid from the macerated cranberries. Add the drained crushed pineapple, miniature marshmallows, and chopped nuts to the bowl. Stir to combine.
