Preheat your oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish with cooking spray or a small amount of oil.
Roast the poblano peppers over an open flame or under the broiler until the skin is charred and blistered. Place them in a bowl, cover with plastic wrap or a towel, and let them steam for 10 minutes. Peel the skins, remove the seeds, and cut the peppers into halves or strips.
Layer the roasted poblano peppers evenly across the bottom of the prepared baking dish.
