Ingredients

  • 4 tablespoons Coriander seeds
  • 2 tablespoons Cumin seeds
  • 2 tablespoons Turmeric powder
  • 1 tablespoon Fenugreek seeds
  • 1 tablespoon Black peppercorns
  • 1 tablespoon Mustard seeds
  • 1.5 tablespoons Paprika
  • 0.5 teaspoons Cayenne pepper
  • 1 piece (about 2 inches long) Cinnamon stick
  • 6 whole Cloves
  • 5 pods Cardamom pods
  • 8 leaves Dried curry leaves (optional)

Directions

Step 1

Start by measuring out all the ingredients to ensure you have everything ready.

Step 2

In a dry skillet or small frying pan, heat the coriander seeds, cumin seeds, fenugreek seeds, black peppercorns, mustard seeds, cinnamon stick, cloves, and cardamom pods over medium-low heat. Stir frequently for 2-3 minutes or until the spices become fragrant. Be careful not to burn them.

Step 3

Allow the toasted spices to cool completely for 2-3 minutes.

Step 4

Using a spice grinder, blender, or mortar and pestle, grind the toasted spices into a fine powder. Work in batches if necessary to ensure an even grind.

Step 5

In a mixing bowl, combine the ground spices with turmeric powder, paprika, cayenne pepper, and dried curry leaves (if using). Mix thoroughly until the blend is uniform in color and texture.

Step 6

Transfer the curry powder mix to an airtight jar or container, and store in a cool, dry place for up to 6 months.

Step 7

Use this homemade curry powder mix in any recipe that calls for curry powder or to add a burst of flavor to your dishes.
