Ingredients

  • 16 ounces fresh spinach
  • 3 tablespoons unsalted butter
  • 1 small yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 1.5 cups whole milk
  • 0.5 cups heavy cream
  • 0.5 cups grated Parmesan cheese
  • 0.25 teaspoons nutmeg, freshly grated
  • to taste salt
  • to taste black pepper, freshly ground

Directions

Step 1

Rinse the spinach thoroughly, remove any tough stems, and set it aside to drain.

Step 2

Bring a large pot of water to a boil and add a pinch of salt. Blanch the spinach for 1-2 minutes, or until it wilts.

Step 3

Drain the spinach and immediately transfer it to a bowl of ice water to stop the cooking process. Squeeze out excess water and chop the spinach coarsely. Set aside.

Step 4

In a large skillet, melt the butter over medium heat. Add the finely chopped onion and sauté for 3-4 minutes, or until softened and translucent.

Step 5

Add the minced garlic and cook for an additional 30 seconds until fragrant.

Step 6

Sprinkle the flour into the skillet and stir constantly for 1-2 minutes to create a roux, ensuring the flour is fully cooked without browning.

Step 7

Gradually pour in the whole milk, stirring constantly to avoid lumps. Follow with the heavy cream, mixing until the mixture thickens, about 4-5 minutes.

Step 8

Stir in the grated Parmesan cheese and grated nutmeg. Season with salt and freshly ground black pepper to taste.

Step 9

Fold the chopped spinach into the creamy sauce, combining thoroughly. Cook for another 3-5 minutes, or until the spinach is heated through and the flavors meld together.

Step 10

Remove from heat and serve immediately as a side dish with your favorite entrée.
