Ingredients

  • 2 tablespoons olive oil
  • 2 pounds ground beef
  • 1 large yellow onion, diced
  • 1 medium green bell pepper, diced
  • 3 cloves garlic, minced
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 0.5 teaspoon cayenne pepper
  • 28 ounces diced tomatoes, with juice
  • 15 ounces tomato sauce
  • 15 ounces black beans, rinsed and drained
  • 15 ounces kidney beans, rinsed and drained
  • 1 cup beef broth
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0 optional toppings (shredded cheese, sour cream, green onions, etc.)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Add the ground beef and cook until browned, breaking it apart with a wooden spoon as it cooks. This should take about 5-7 minutes. Drain any excess grease if necessary.

Step 3

Stir in the diced onion and green bell pepper. Cook for 4-5 minutes or until the vegetables are softened.

Step 4

Add the minced garlic and cook for an additional 1 minute until fragrant.

Step 5

Sprinkle in the chili powder, ground cumin, paprika, dried oregano, and cayenne pepper. Stir well to evenly coat the beef and vegetables with the spices.

Step 6

Pour in the diced tomatoes (with their juice), tomato sauce, black beans, kidney beans, and beef broth. Add the salt and black pepper, then stir everything together.

Step 7

Bring the mixture to a gentle boil, then reduce the heat to low and let it simmer uncovered for about 30 minutes, stirring occasionally.

Step 8

Taste and adjust seasonings if needed. If the chili is too thick for your liking, add a bit more beef broth or water to reach your desired consistency.

Step 9

Serve hot with your choice of toppings, such as shredded cheese, sour cream, or chopped green onions. Enjoy!
