Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 0.5 cups all-purpose flour
  • 1 teaspoon salt
  • 0.5 teaspoons ground black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 3 cloves garlic cloves, minced
  • 1 cups chicken broth
  • 0.5 cups heavy cream
  • 0.5 cups sliced almonds
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness of about 1/2 inch.

Step 2

In a shallow dish, combine the flour, salt, and pepper. Dredge each chicken breast in the flour mixture, shaking off any excess.

Step 3

Heat the olive oil in a large skillet over medium-high heat. Once hot, add the chicken breasts to the pan and cook for 4-5 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.

Step 4

In the same skillet, lower the heat to medium and melt the butter. Add the minced garlic and sauté for 1 minute until fragrant.

Step 5

Pour in the chicken broth and bring it to a simmer, scraping up any browned bits from the bottom of the pan.

Step 6

Reduce the heat to low and stir in the heavy cream. Let the sauce simmer gently for 3-4 minutes until slightly thickened.

Step 7

Stir in the sliced almonds and return the chicken breasts to the skillet. Spoon the sauce over the chicken and let it simmer for another 2-3 minutes to heat through.

Step 8

Garnish the chicken with chopped parsley and serve immediately. This dish pairs beautifully with steamed vegetables or rice.
