Ingredients

  • 300 g Sweetened shredded coconut
  • 200 ml Sweetened condensed milk
  • 1 tsp Vanilla extract
  • 2 large Egg whites
  • 1 pinch Salt
  • 100 g Dark chocolate (optional, for dipping)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone baking mat.

Step 2

In a large mixing bowl, combine the sweetened shredded coconut, sweetened condensed milk, and vanilla extract. Mix well until fully combined.

Step 3

In a separate clean, dry bowl, lightly whisk the egg whites and a pinch of salt until they reach soft peaks. You can use a hand mixer or whisk by hand.

Step 4

Gently fold the beaten egg whites into the coconut mixture. Take care not to deflate the egg whites too much; the mixture should be light and airy.

Step 5

Using a small cookie scoop or a tablespoon, scoop the mixture onto the prepared baking sheet, spacing each macaroon about 1 inch apart. Shape them into mounds if needed.

Step 6

Bake in the preheated oven for 18–20 minutes or until the tops and edges are golden brown.

Step 7

Remove the baking sheet from the oven and allow the macaroons to cool completely on the pan before transferring them to a wire rack.

Step 8

If desired, melt the dark chocolate in a microwave-safe bowl in 20-second intervals, stirring in between, until smooth. Dip the bottoms of the cooled macaroons into the chocolate and place them on a parchment-lined tray to set.

Step 9

Once the chocolate is set, serve and enjoy! Store leftovers in an airtight container for up to a week.
