Ingredients

  • 170 grams bittersweet or semisweet chocolate
  • 4 tablespoons strong coffee
  • 113 grams unsalted butter
  • 4 large egg yolks
  • 100 grams granulated sugar
  • 2 tablespoons dark rum or orange liqueur (optional)
  • 4 large egg whites
  • 1 pinch salt
  • 1 tablespoon granulated sugar (for egg whites)

Directions

Step 1

Place the bittersweet or semisweet chocolate in a heatproof bowl, and melt it over a pot of simmering water (double boiler method). Stir occasionally until smooth. Add the coffee to the melted chocolate and mix well. Remove from heat.

Step 2

Cut the unsalted butter into small pieces and add it to the warm melted chocolate, stirring until fully incorporated and smooth.

Step 3

In a separate bowl, whisk the egg yolks together with the granulated sugar over the same pot of simmering water. Whisk continuously for about 3-4 minutes until the mixture is thickened and pale, then remove from heat.

Step 4

Slowly whisk the egg yolk mixture into the melted chocolate, ensuring it is well combined. If desired, stir in the dark rum or orange liqueur for extra flavor.

Step 5

In another clean mixing bowl, use an electric mixer to beat the egg whites with the pinch of salt until soft peaks form. Gradually add the 1 tablespoon of granulated sugar while beating, and continue until stiff peaks form.

Step 6

Gently fold about one-third of the beaten egg whites into the chocolate mixture to lighten it. Then, carefully fold the remaining egg whites in two additions until no streaks remain, being careful not to deflate the mixture.

Step 7

Spoon the mousse into serving dishes, ramekins, or glasses. Chill in the refrigerator for at least 2 hours, or until set.

Step 8

Serve chilled, optionally garnished with whipped cream, chocolate shavings, or fresh berries.
