Ingredients

  • 2.5 cups All-purpose flour
  • 1 cup Unsalted butter (cold, diced)
  • 0.25 cup Vegetable shortening (cold)
  • 0.5 teaspoons Salt
  • 1 tablespoon Sugar (optional)
  • 6 tablespoons Ice water

Directions

Step 1

In the bowl of a food processor, combine the all-purpose flour, salt, and sugar (if using). Pulse a few times to blend.

Step 2

Scatter the cold, diced unsalted butter and vegetable shortening over the flour mixture. Pulse 10-12 times until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining.

Step 3

While pulsing the food processor, drizzle in the ice water one tablespoon at a time through the feed tube. Stop pulsing as soon as the dough starts to clump together but before it forms a solid ball.

Step 4

Turn the dough out onto a clean work surface. Divide it in half, and shape each half into a flat disk. Wrap each disk in plastic wrap and refrigerate for at least 1 hour or up to 2 days (or freeze for later use).

Step 5

When ready to use, roll out the chilled dough on a lightly floured surface to fit your pie pan. Proceed with your desired pie recipe as needed.
