Ingredients

  • 200 grams All-purpose flour
  • 100 grams Unsalted butter
  • 50 grams Granulated sugar
  • 1 pinch Salt
  • 2 tablespoons Ice water
  • 500 grams Plain full-fat yogurt
  • 3 large Eggs
  • 75 grams Honey
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Lemon zest
  • 1 cup Fresh berries (optional for garnish)
  • 1 tablespoon Powdered sugar (optional for dusting)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large mixing bowl, combine the all-purpose flour, granulated sugar, and a pinch of salt.

Step 3

Cut the cold unsalted butter into small cubes and work it into the dry ingredients using your fingers or a pastry cutter until it resembles coarse crumbs.

Step 4

Add ice water, one tablespoon at a time, and mix until the dough just comes together. Do not overwork the dough.

Step 5

Shape the dough into a disc, wrap it in plastic wrap, and refrigerate for 20-30 minutes.

Step 6

On a lightly floured surface, roll out the chilled dough into a circle about 1/8 inch (3mm) thick. Carefully transfer it into a 9-inch tart pan, pressing it gently into the corners and trimming off any excess dough.

Step 7

Prick the bottom of the crust with a fork and line it with parchment paper. Fill it with pie weights or dried beans.

Step 8

Blind bake the crust in the preheated oven for 15 minutes, then carefully remove the parchment and weights. Bake for another 5 minutes until lightly golden. Let the crust cool completely.

Step 9

In a mixing bowl, whisk together the yogurt, eggs, honey, vanilla extract, and lemon zest until smooth and well combined.

Step 10

Pour the yogurt filling into the cooled tart crust, spreading it evenly.

Step 11

Bake the tart in the oven for 30-35 minutes, or until the filling is set and slightly golden around the edges. The center should jiggle slightly but will firm up as it cools.

Step 12

Allow the tart to cool to room temperature, then refrigerate for at least 2 hours before serving.

Step 13

Optionally, garnish the tart with fresh berries and a light dusting of powdered sugar before serving.
