Ingredients

  • 3 medium Cucumbers
  • 1.5 tablespoons White vinegar
  • 1 teaspoon Salt
  • 1 teaspoon Sugar
  • 2 tablespoons Unsalted butter
  • 2 tablespoons Parsley, minced
  • 2 tablespoons Dill or chives (optional, for variations)
  • 1 pinch Black pepper, freshly ground

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Peel the cucumbers, slice them in half lengthwise, and scoop out the seeds using a spoon. Cut the halves into thick slices, about 1/4-inch thick.

Step 3

Place the cucumber slices in a mixing bowl. Add the white vinegar, salt, and sugar, and toss to coat evenly. Let the cucumbers sit for 30 minutes, then drain off any liquid and pat the slices dry with a paper towel.

Step 4

In a large skillet, melt the unsalted butter over medium heat. Add the cucumber slices and sauté for 2-3 minutes to coat them in the butter.

Step 5

Transfer the cucumbers to a baking dish. Sprinkle the minced parsley over the top, along with the black pepper. If using dill or chives as a variation, sprinkle them on as well.

Step 6

Cover the baking dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 10 minutes to allow any excess liquid to evaporate and the cucumbers to become tender.

Step 7

Remove from the oven and serve hot as a side dish. Garnish with additional fresh herbs, if desired.
