Ingredients

  • 1 pound asparagus
  • 1 medium yellow onion
  • 3 cloves garlic
  • 2 tablespoons unsalted butter
  • 2 tablespoons lemon juice
  • 1 cup vegetable or chicken stock
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 1 teaspoon lemon zest

Directions

Step 1

Trim the woody ends off the asparagus and discard. Cut the asparagus spears into 2-inch pieces and set aside.

Step 2

Peel and thinly slice the yellow onion. Mince the garlic cloves.

Step 3

In a large skillet or sauté pan, melt the butter over medium heat.

Step 4

Add the sliced onions to the pan and cook for 5-6 minutes, stirring occasionally, until softened and slightly golden.

Step 5

Add the minced garlic to the pan and cook for an additional 1-2 minutes until fragrant.

Step 6

Place the asparagus pieces into the pan and stir to coat them in the butter, onions, and garlic.

Step 7

Pour the vegetable or chicken stock over the asparagus and bring to a simmer. Cover the pan with a lid and let the asparagus cook for 6-8 minutes, or until tender but still vibrant green.

Step 8

Remove the lid and reduce the heat to low. Stir in the lemon juice, salt, and black pepper.

Step 9

Cook for another 1-2 minutes to allow the flavors to combine. Taste and adjust seasoning if needed.

Step 10

Transfer the asparagus mixture to a serving dish and sprinkle the lemon zest over the top. Serve warm.
