Ingredients

  • 1.5 pounds Boneless, skinless chicken thighs
  • 8 cups Chicken broth
  • 2 cups Carrots, diced
  • 1 cup Celery, diced
  • 1 medium Yellow onion, diced
  • 2 tablespoons Unsalted butter
  • 1.5 cups All-purpose flour
  • 2 teaspoons Baking powder
  • 0.5 teaspoons Salt
  • 0.75 cup Milk
  • 2 tablespoons Fresh parsley, chopped (optional)
  • 1 tablespoon Olive oil
  • 0 Salt and pepper to taste

Directions

Step 1

Heat the olive oil in a large pot over medium heat. Add the diced onion, carrot, and celery. Sauté for 5 minutes until softened.

Step 2

Season the chicken thighs with salt and pepper. Add them to the pot, searing 3-4 minutes per side until lightly browned.

Step 3

Pour in the chicken broth and bring to a boil. Reduce to a simmer, cover, and cook for 20 minutes or until the chicken is cooked through.

Step 4

While the chicken is cooking, prepare the dumpling dough. In a mixing bowl, whisk together the all-purpose flour, baking powder, and salt.

Step 5

Stir in the milk and melted butter until a soft dough forms. Be careful not to overmix.

Step 6

Remove the cooked chicken from the pot and shred it using two forks. Return the shredded chicken to the pot.

Step 7

Drop spoonfuls of the dumpling dough into the simmering broth. Cover the pot and let the dumplings cook for 10-12 minutes. Don’t lift the lid while cooking to ensure fluffy dumplings.

Step 8

Taste the broth and adjust seasoning with salt and pepper if needed.

Step 9

Ladle the chicken and dumplings into bowls, garnish with fresh parsley if desired, and serve hot.
