Ingredients

  • 200 grams Dark chocolate (70% cocoa preferred)
  • 100 grams Unsalted butter
  • 4 Eggs (large, separated into yolks and whites)
  • 100 grams Granulated sugar
  • 120 milliliters Heavy cream (cold)
  • 1 pinch Salt
  • 1 teaspoon Vanilla extract
  • 0 Optional: Grated dark chocolate or whipped cream for garnish

Directions

Step 1

Prepare a double boiler by setting a heatproof bowl over a pot of simmering water. Make sure the bottom of the bowl does not touch the water.

Chop the dark chocolate into small pieces and add it to the bowl. Add the unsalted butter and melt them together gently, stirring occasionally until smooth. Once melted, remove the bowl from the heat and let it cool slightly.
