Ingredients

  • 200 grams All-purpose flour
  • 100 grams Unsalted butter (cold, diced)
  • 50 grams Powdered sugar
  • 1 Egg yolk
  • 1 tablespoon Cold water
  • 200 grams Dark chocolate (70% cocoa)
  • 150 milliliters Heavy cream
  • 30 grams Unsalted butter (room temperature)
  • 1 teaspoon Vanilla extract
  • 1 pinch Sea salt flakes
  • 1 tablespoon Cocoa powder or chocolate shavings (for garnish)

Directions

Step 1

Preheat your oven to 180°C (350°F).

Step 2

To make the tartlet dough, combine the flour and powdered sugar in a mixing bowl. Add the cold, diced butter and use your fingertips to rub it into the dry ingredients until the mixture resembles coarse crumbs.

Step 3

Add the egg yolk and cold water. Mix gently until the dough comes together. Be careful not to overwork the dough. Wrap it in plastic wrap and refrigerate for 20 minutes.

Step 4

On a lightly floured surface, roll out the chilled dough to about 3mm thick. Cut out circles slightly larger than your tartlet molds and press the dough into the molds. Trim any excess dough from the edges.

Step 5

Use a fork to pierce the bottom of each tartlet shell. Line them with small pieces of parchment paper and fill with baking weights or dried beans. Bake the tartlet shells for 10 minutes, then remove the weights and parchment and bake for another 5 minutes until golden.

While the tartlet shells cool, make the chocolate ganache. Finely chop the dark chocolate and place it in a heatproof bowl.

Step 7

In a small saucepan, heat the heavy cream over medium heat until it begins to simmer. Pour the hot cream over the chopped chocolate and let it sit for 1 minute.

Gently stir the mixture until the chocolate is fully melted and smooth. Add the room-temperature butter, vanilla extract, and sea salt, stirring until fully incorporated.

Step 9

Once the tartlet shells have cooled completely, fill each shell with the chocolate ganache. Tap the molds lightly on the counter to smooth the surface.

Step 10

Refrigerate the tartlets for at least 1 hour to set the ganache.

Step 11

Before serving, dust the tartlets with cocoa powder or sprinkle with chocolate shavings for garnish.
