Ingredients

  • 1.5 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 0.25 teaspoon ground ginger
  • 0.25 teaspoon salt
  • 0.5 cup brown sugar, lightly packed
  • 0.25 cup granulated sugar
  • 1 cup ripe bananas, mashed (about 3 medium bananas)
  • 0.25 cup unsalted butter, melted and cooled
  • 0.5 cup plain Greek yogurt
  • 1 piece large egg
  • 1 teaspoon pure vanilla extract

Directions

Step 1

Preheat the oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or lightly grease the cups with non-stick spray.

Step 2

In a medium-sized bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt. Set aside.

Step 3

In a large bowl, whisk the brown sugar, granulated sugar, and mashed bananas until well combined.

Step 4

Add the melted butter, Greek yogurt, egg, and vanilla extract to the banana mixture. Whisk until smooth and creamy.

Step 5

Gradually add the dry ingredients to the wet ingredients. Gently fold the mixture with a spatula until just combined. Do not overmix; a few small lumps are okay.

Step 6

Divide the batter evenly among the 12 muffin cups, filling each about 3/4 full.

Step 7

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 8

Remove the muffins from the oven and let them cool in the tin for 5 minutes. Then transfer them to a wire rack to cool completely.

Step 9

Serve warm or at room temperature. Store leftovers in an airtight container at room temperature for up to 3 days, or freeze for up to 2 months.
