Ingredients

  • 1 3-4 pounds Whole chicken
  • 4 medium Carrots
  • 3 Celery stalks
  • 1 large Yellow onion
  • 3 Garlic cloves
  • 0.5 bunch Parsley
  • 2 Bay leaves
  • 1 teaspoon Black peppercorns
  • 2 teaspoons Kosher salt
  • 2 cups Egg noodles (optional)
  • 10 cups Water

Directions

Step 1

Prepare the vegetables by peeling and cutting the carrots into 1-inch chunks, slicing the celery, and quartering the onion. Leave the garlic cloves whole.

Step 2

In a large stockpot, place the whole chicken and add the prepared vegetables (carrots, celery, onion, and garlic).

Step 3

Add the parsley, bay leaves, black peppercorns, and kosher salt to the pot.

Step 4

Pour 10 cups of water into the stockpot, ensuring that the chicken and vegetables are fully submerged.

Step 5

Bring the mixture to a boil over medium-high heat, then reduce the heat to low and simmer for 1.5 to 2 hours. Skim off any foam or impurities that rise to the surface as it cooks.

Step 6

Carefully remove the chicken from the pot and set it aside to cool slightly. Strain the broth through a fine-mesh sieve into a large bowl or another clean pot, discarding the solids (vegetables, herbs, etc.).

Step 7

Pick the meat off the chicken once it is cool enough to handle, discarding the skin and bones. Shred the chicken into bite-sized pieces and set aside.

Step 8

Return the strained broth to the stockpot and bring it back to a low simmer.

Step 9

If using egg noodles, add them to the simmering broth and cook according to package instructions, typically 6-8 minutes.

Step 10

Once the noodles are cooked, add the shredded chicken back into the soup to warm through.

Step 11

Taste the soup and adjust seasoning with additional salt if necessary.

Step 12

Serve the chicken soup hot, garnished with additional chopped parsley if desired. Enjoy!
