Ingredients

  • 3 pounds Boneless chuck roast
  • 4 cups Beef broth
  • 0.25 cup Soy sauce
  • 2 tablespoons Worcestershire sauce
  • 4 Garlic cloves (minced)
  • 1 Onion (thinly sliced)
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried rosemary
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 6 Hoagie rolls
  • 6 Provolone cheese slices
  • 2 tablespoons Unsalted butter (optional, for toasting bread)

Directions

Step 1

Place the boneless chuck roast in the slow cooker.

Step 2

Pour in the beef broth, soy sauce, and Worcestershire sauce over the roast.

Step 3

Add the minced garlic, sliced onion, dried thyme, dried rosemary, salt, and black pepper to the slow cooker.

Step 4

Cover and cook on low heat for 8 hours (or on high for 4-5 hours) until the beef is fork-tender.

Step 5

Once the beef is done, remove it from the slow cooker and shred it using two forks.

Step 6

Strain the cooking liquid from the slow cooker through a fine mesh sieve to remove onions and spices. Reserve the strained liquid as the au jus dipping sauce.

Step 7

If desired, toast the hoagie rolls by spreading butter on the cut sides and broiling them in the oven for 1-2 minutes until golden brown.

Step 8

Place a generous amount of shredded beef onto the bottom half of each hoagie roll.

Step 9

Top the beef with a slice of provolone cheese and close the sandwich with the top half of the hoagie roll.

Step 10

Serve the sandwiches hot with small bowls of the reserved au jus for dipping.
