Ingredients

  • 4 pieces Chicken thighs (bone-in, skinless)
  • 1 cup Wild rice
  • 2 cups Low-sodium chicken broth
  • 2 tablespoons Butter
  • 4 cloves Garlic cloves (minced)
  • 1 piece Onion (medium, diced)
  • 1 teaspoon Fresh thyme leaves (chopped)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Olive oil
  • 2 tablespoons Fresh parsley (chopped, for garnish)

Directions

Step 1

Heat a large skillet over medium heat and add the olive oil.

Step 2

Season the chicken thighs with salt and black pepper.

Step 3

Sear the chicken thighs in the skillet for 2-3 minutes on each side until golden brown, then remove and set aside.

Step 4

In the same skillet, melt the butter and add the minced garlic and diced onion. Sauté for 2-3 minutes until fragrant and softened.

Pour the chicken broth into the skillet to deglaze, scraping up any browned bits from the bottom of the pan. Remove from heat.

Rinse the wild rice under cold water and drain.

Cover the crock pot with its lid and cook on LOW for 3.5-4 hours, or until the chicken is tender and cooked through, and the wild rice is fully cooked.

Once done, carefully fluff the wild rice with a fork and remove the chicken thighs.

Serve the garlic chicken over the cooked wild rice, garnished with chopped fresh parsley.
