Ingredients

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 8 ounces button mushrooms, sliced
  • 2 tablespoons all-purpose flour
  • 2 cups beef broth
  • 0.75 cup sour cream
  • 1 tablespoon Dijon mustard
  • 0.5 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 12 ounces egg noodles
  • 2 tablespoons fresh parsley, chopped (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the egg noodles according to package instructions, then drain and set aside.

Step 2

Heat the olive oil in a large skillet over medium heat. Add the diced onion and minced garlic, cooking until softened, about 2-3 minutes.

Step 3

Add the ground beef to the skillet. Cook until browned, breaking it up with a wooden spoon, about 5-7 minutes. Drain any excess fat if necessary.

Step 4

Add the sliced mushrooms to the skillet and cook until softened, about 4-5 minutes.

Step 5

Sprinkle the flour over the beef and mushroom mixture, stirring to coat evenly. Cook for 1-2 minutes to eliminate the raw flour taste.

Step 6

Slowly pour in the beef broth while stirring constantly to avoid clumps. Bring the mixture to a simmer and cook until thickened, about 3-4 minutes.

Step 7

Stir in the sour cream, Dijon mustard, paprika, salt, and black pepper until fully combined. Simmer for another 2-3 minutes to heat through.

Step 8

Taste and adjust seasoning if needed.

Step 9

Add the cooked egg noodles to the skillet, tossing to coat in the creamy sauce. Optionally, garnish with fresh parsley before serving.

Step 10

Serve immediately and enjoy!
