Ingredients

  • 4 cups fresh broccoli florets
  • 1 can (10.5 ounces) cream of mushroom soup
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese
  • 1.5 cups (crushed) Ritz crackers
  • 4 tablespoons (melted) unsalted butter
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Bring a large pot of water to a boil. Add the broccoli florets and blanch for 3 minutes. Drain and immediately plunge them into a bowl of ice water to stop the cooking process. Drain and set aside.

Step 3

In a large mixing bowl, combine the cream of mushroom soup, sour cream, 1.5 cups of shredded cheddar cheese, garlic powder, onion powder, salt, and pepper. Mix until well combined.

Step 4

Fold the blanched broccoli into the mixture, ensuring the broccoli is evenly coated.

Step 5

Transfer the mixture into a greased 9x13-inch baking dish and spread it out evenly.

Step 6

In a small bowl, combine the crushed Ritz crackers and melted butter. Stir until the crackers are evenly coated.

Step 7

Sprinkle the buttered cracker topping evenly over the casserole.

Step 8

Top the casserole with the remaining 0.5 cup of shredded cheddar cheese.

Step 9

Bake in the preheated oven for 25-30 minutes, or until the casserole is hot and bubbly, and the topping is golden brown.

Step 10

Remove from the oven and let the casserole sit for 5 minutes before serving.
