Ingredients

  • 1 cup Arborio rice
  • 4 cups Whole milk
  • 1 cup Heavy cream
  • 0.5 cup Granulated sugar
  • 2 teaspoons Vanilla extract
  • 0.25 teaspoon Salt
  • 0.5 teaspoon Ground cinnamon (for garnish)
  • 0.5 cup Fresh berries or fruit (optional, for garnish)

Directions

Step 1

Rinse the Arborio rice under cold water until the water runs clear. This will remove excess starch and prevent clumping.

Step 2

In a medium-sized saucepan, combine the milk, heavy cream, and salt. Heat the mixture over medium heat, stirring occasionally, until it just begins to simmer. Be careful not to boil.

Step 3

Add the rinsed Arborio rice to the saucepan and reduce the heat to low. Stir well to ensure the rice is evenly distributed in the liquid.

Step 4

Cook the rice mixture over low heat for approximately 35-40 minutes, stirring frequently to prevent sticking. The mixture should thicken as the rice absorbs the liquid. If it becomes too thick, you can add a splash of milk to loosen it.

Step 5

Once the rice is cooked (it should be soft and creamy), stir in the sugar and vanilla extract. Mix well until the sugar dissolves completely.

Step 6

Remove the saucepan from heat and let the Rice Cream Delight cool slightly. It can be served warm or chilled, depending on your preference.

Step 7

To serve, spoon the rice cream into individual bowls or glasses. Sprinkle a pinch of ground cinnamon on top and garnish with fresh berries or fruit if desired.

Step 8

Enjoy this comforting and creamy dessert with family and friends!
