Ingredients

  • 800 g Judiones (large white beans), precooked
  • 2 tbsp Olive oil
  • 3 Garlic cloves, minced
  • 1 medium Onion, chopped
  • 1 medium Red bell pepper, chopped
  • 2 medium Tomato, diced
  • 1 tsp Paprika
  • 2 Bay leaves
  • 150 g Chorizo, sliced
  • 400 ml Water or chicken broth
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Fresh parsley, chopped

Directions

Step 1

In a large pot, heat the olive oil over medium heat.

Step 2

Add the minced garlic and chopped onion. Sauté for about 5 minutes until the onion becomes translucent.

Step 3

Add the chopped red bell pepper, and cook for an additional 3 minutes.

Step 4

Stir in the diced tomatoes and let them cook down for 5 minutes until they start to break down and create a sauce.

Add the paprika and bay leaves, stirring well to combine.

Step 6

Add the sliced chorizo to the pot and cook, stirring occasionally, until it is browned, about 5 minutes.

Step 7

Pour in the precooked judiones, water or chicken broth, salt, and black pepper.

Bring the mixture to a simmer, then reduce the heat to low. Cover and let it simmer gently for 20 minutes, allowing the flavors to meld together.
