Ingredients

  • 4 cups cooked jasmine rice
  • 1 lb boneless pork loin
  • 2 large eggs
  • 1 cup frozen peas and carrots mix
  • 0.25 cup soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil
  • 3 garlic cloves, minced
  • 4 green onions, sliced
  • 1 teaspoon ginger, grated
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Prepare the pork by slicing it into thin bite-sized strips. Season the pork with salt and black pepper.

Step 2

Heat 1 tablespoon of vegetable oil in a large wok or skillet over medium-high heat. Add the pork and stir-fry for 3-4 minutes until lightly browned and cooked through. Remove from the skillet and set aside.

Step 3

In the same skillet, add another tablespoon of vegetable oil. Crack the eggs into the skillet and quickly scramble them. Once cooked, push the scrambled eggs to one side of the skillet.

Step 4

Add the garlic and grated ginger to the skillet, stirring for about 30 seconds until fragrant.

Step 5

Add the frozen peas and carrots mix to the skillet. Stir-fry for another 2-3 minutes until heated through.

Step 6

Add the cooked rice to the skillet, breaking up any clumps with a spatula. Stir well to combine with the vegetables and eggs.

Step 7

Return the pork to the skillet and mix it evenly with the rice.

Step 8

Pour the soy sauce, oyster sauce, and sesame oil over the rice mixture. Stir-fry everything together for 2-3 minutes, ensuring that the sauce evenly coats the rice and pork.

Step 9

Remove from heat. Garnish with the sliced green onions and serve immediately.
