Ingredients

  • 1 pound Ground beef (85% lean or higher)
  • 1 medium Yellow onion, finely chopped
  • 2 cloves Garlic cloves, minced
  • 8 ounces White mushrooms, sliced
  • 2 tablespoons Unsalted butter
  • 2 tablespoons All-purpose flour
  • 2 cups Beef broth
  • 1 cup Sour cream
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons Dijon mustard
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 12 ounces Egg noodles
  • 2 tablespoons Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil and cook the egg noodles according to package instructions. Drain and set aside.

Step 2

In a large skillet over medium-high heat, add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Remove the beef from the skillet with a slotted spoon and set aside. Drain excess grease, keeping 1 tablespoon in the pan.

Step 3

Return the skillet to medium heat and add the butter. Once melted, stir in the chopped onion and cook for 3-4 minutes, until softened. Add the minced garlic and cook for another 30 seconds, stirring constantly.

Step 4

Add the sliced mushrooms to the skillet and cook for 5-6 minutes, until softened and browned. Stir occasionally to prevent sticking.

Step 5

Sprinkle the flour over the mushrooms and onion mixture, stirring constantly to coat evenly. Cook for 1-2 minutes to remove the raw flour taste.

Step 6

Slowly pour in the beef broth while stirring to create a smooth sauce. Bring the mixture to a gentle simmer and cook for 3-4 minutes, until the sauce thickens.

Step 7

Reduce the heat to low. Stir in the sour cream, Worcestershire sauce, Dijon mustard, paprika, salt, and black pepper. Mix until the sauce is smooth and creamy.

Step 8

Return the cooked ground beef to the skillet and stir to combine. Simmer on low for 5 minutes, allowing the flavors to meld together.

Step 9

Serve the Stroganoff over the cooked egg noodles. Garnish with fresh parsley, if desired. Enjoy!
