Ingredients

  • 2 pounds beef chuck, cubed
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 3 garlic cloves, minced
  • 3 medium carrots, sliced into rounds
  • 2 celery stalks, chopped
  • 3 large russet potatoes, peeled and diced
  • 2 tablespoons tomato paste
  • 4 cups beef broth
  • 2 bay leaves
  • 1 teaspoon fresh thyme, chopped
  • 1 cup frozen peas
  • 2 tablespoons flour
  • 2 tablespoons water

Directions

Step 1

Season the beef cubes with salt and pepper.

Step 2

Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.

Step 3

Brown the beef in batches to avoid overcrowding the pot. Remove the browned beef and set aside.

Step 4

In the same pot, sauté the onion for 3-4 minutes until softened.

Step 5

Add the garlic and cook for another minute, stirring frequently.

Step 6

Stir in the carrots, celery, and potatoes, cooking for 5 minutes to slightly soften the vegetables.

Step 7

Push the vegetables to the side of the pot and add the tomato paste, toasting it for 1-2 minutes.

Step 8

Return the browned beef to the pot and pour in the beef broth. Stir well.

Step 9

Add the bay leaves and thyme, bringing the mixture to a boil.

Step 10

Reduce heat to low, cover, and simmer for 2 hours, stirring occasionally, until the beef is tender and the flavors have melded.

Step 11

In a small bowl, whisk the flour and water together to create a slurry.

Step 12

Stir the slurry into the stew and simmer uncovered for 10 minutes to thicken.

Step 13

Stir in the peas and cook for another 5 minutes.

Step 14

Remove bay leaves, taste, and adjust seasoning with additional salt and pepper if needed.

Step 15

Serve hot and enjoy!
