Ingredients

  • 16 oz Cheese tortellini (fresh or frozen)
  • 2 tbsp Olive oil
  • 3 pieces Garlic cloves, minced
  • 14 oz Crushed tomatoes
  • 1 cup Heavy cream
  • 1 cup Parmesan cheese, grated
  • 0.25 cup Fresh basil leaves, chopped
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 0.25 tsp Red pepper flakes (optional)
  • 1 tbsp Unsalted butter
  • 2 tbsp Fresh parsley, chopped (for garnish)

Directions

Step 1

Cook the tortellini according to the package instructions. Drain and set aside, reserving about 1/2 cup of the pasta cooking water.

Step 2

In a large skillet or saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes, until fragrant.

Step 3

Stir in the crushed tomatoes, salt, black pepper, and red pepper flakes (if using). Let the sauce simmer for 5-7 minutes, stirring occasionally.

Step 4

Reduce the heat to low, then pour in the heavy cream. Stir well until the sauce is smooth and creamy.

Step 5

Add the grated Parmesan cheese to the sauce, stirring until fully melted and combined.

Step 6

Toss the cooked tortellini into the sauce, ensuring each piece is coated. If the sauce is too thick, add a splash of the reserved pasta water to loosen it to your desired consistency.

Step 7

Remove the skillet from the heat and stir in the chopped basil and the butter until fully incorporated.

Step 8

Serve immediately, garnished with fresh parsley and more grated Parmesan cheese, if desired.
