Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 6 cups Fresh baby spinach
  • 14.5 oz Diced tomatoes (canned, with juices)
  • 1 cup Heavy cream
  • 1 cup Chicken broth
  • 4 cloves Garlic cloves, minced
  • 1 medium Yellow onion, diced
  • 1 cup Parmesan cheese, grated
  • 2 tablespoons Olive oil
  • 1 teaspoon Paprika
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Crushed red pepper flakes (optional)

Directions

Step 1

Season chicken breasts on both sides with salt, black pepper, and paprika.

Step 2

Heat olive oil in a skillet over medium-high heat. Sear the chicken breasts on each side for 2-3 minutes until lightly browned (they don't need to be fully cooked). Remove and set aside.

Step 3

In the same skillet, add the diced onion and sauté for 3-4 minutes until translucent. Add the minced garlic and cook for another minute, stirring frequently. Remove from heat.

Step 4

In the crock pot, pour in the chicken broth, heavy cream, and canned diced tomatoes with their juices. Stir to combine.

Step 5

Add the sautéed onion and garlic mixture to the crock pot. Stir in dried oregano, crushed red pepper flakes (if using), and additional salt and pepper to taste.

Step 6

Layer the fresh baby spinach over the liquid mixture in the crock pot.

Step 7

Place the seared chicken breasts on top of the spinach. Press gently so the chicken is slightly submerged in the liquid.

Step 8

Cover the crock pot with the lid and cook on LOW for 4-5 hours or on HIGH for 2-3 hours, until the chicken is tender and fully cooked through (165°F internal temperature).

Step 9

Once cooked, sprinkle the grated Parmesan cheese evenly over the top. Stir gently to combine the cheese and spinach into the sauce.

Step 10

Serve hot over rice, pasta, or with crusty bread for dipping.
