Season chicken breasts on both sides with salt, black pepper, and paprika.
Heat olive oil in a skillet over medium-high heat. Sear the chicken breasts on each side for 2-3 minutes until lightly browned (they don't need to be fully cooked). Remove and set aside.
In the same skillet, add the diced onion and sauté for 3-4 minutes until translucent. Add the minced garlic and cook for another minute, stirring frequently. Remove from heat.
In the crock pot, pour in the chicken broth, heavy cream, and canned diced tomatoes with their juices. Stir to combine.
