  • 6 pieces large eggs
  • 2 tablespoons milk
  • 8 slices bacon
  • 1 cup shredded cheddar cheese
  • 1 small red bell pepper
  • 1 small onion
  • 1 cup baby spinach
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 1 tablespoon olive oil

Directions

Step 1

In a medium bowl, whisk together the eggs, milk, salt, and black pepper until well combined. Set aside.

Heat a large skillet over medium heat and cook the bacon until crispy. Transfer the bacon to a plate lined with paper towels to drain. Once cooled, crumble the bacon into small pieces.

Discard most of the bacon grease from the skillet, leaving about 1 teaspoon. Add the olive oil to the skillet and heat over medium heat.
