Ingredients

  • 2 hearts Romaine lettuce
  • 1 head Radicchio
  • 1 medium Cucumber
  • 1 cup Cherry tomatoes
  • 0.5 medium Red onion
  • 1 cup Garbanzo beans (chickpeas), drained and rinsed
  • 0.5 cup Kalamata olives, pitted and sliced
  • 0.75 cup Feta cheese, crumbled
  • 0.25 cup Fresh parsley, chopped
  • 0.25 cup Extra virgin olive oil
  • 3 tablespoons Red wine vinegar
  • 1 tablespoon Fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 clove Garlic, minced
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper, freshly ground

Directions

Step 1

Wash and dry the Romaine lettuce and radicchio. Chop both into bite-sized pieces and place them in a large salad bowl.

Peel the cucumber if desired, then dice into small cubes. Add to the salad bowl.
