Ingredients

  • 4 cups rolled oats
  • 1 cup shelled pistachios
  • 1 cup slivered almonds
  • 1 cup pecan halves
  • 1 cup unsweetened coconut flakes
  • 1 cup pumpkin seeds
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 0.5 teaspoon ground nutmeg
  • 0.25 teaspoon ground cloves
  • 0.5 cup maple syrup
  • 0.5 cup melted coconut oil
  • 1 teaspoon vanilla extract
  • 1 cup dried cranberries
  • 0.5 cup chopped dried apricots

Directions

Step 1

Preheat your oven to 325°F (165°C) and line a large baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the rolled oats, pistachios, almonds, pecans, coconut flakes, pumpkin seeds, cinnamon, ginger, nutmeg, and cloves. Mix well to evenly distribute the spices.

In a small bowl, whisk together the maple syrup, melted coconut oil, and vanilla extract until well combined.
