  • 6 cups (sliced) yellow summer squash
  • 2 cups (sliced) zucchini
  • 1 medium (chopped) onion
  • 4 tablespoons (divided) butter
  • 1.5 cups shredded cheddar cheese
  • 1 cup sour cream
  • 1 large (beaten) egg
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1.5 cups (crushed) Ritz crackers
  • 0.5 cups (grated) parmesan cheese

Directions

Step 1

Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.

Step 2

Bring a large pot of water to a boil. Blanch the sliced summer squash and zucchini for 3-4 minutes until they are slightly tender. Drain well and set aside.

Step 3

In a large skillet over medium heat, melt 2 tablespoons of butter. Add the chopped onion and sauté until softened and translucent, about 5 minutes. Remove from heat.
