Ingredients

  • 2 large English cucumbers
  • 1 teaspoon Salt
  • 1 cup Sour cream
  • 1 tablespoon White vinegar
  • 1 teaspoon Granulated sugar
  • 1 tablespoon Dill (fresh or dried)
  • 0.5 teaspoon Black pepper
  • 0.5 small Red onion (optional, thinly sliced)

Directions

Step 1

Wash the cucumbers thoroughly and pat them dry.

Step 2

Slice the cucumbers thinly (approximately 1/8 inch thick) and place them in a large colander.

Step 3

Sprinkle the cucumber slices with salt and toss gently to coat. Let the cucumbers sit for 15-20 minutes to draw out excess water.

Step 4

While the cucumbers are resting, prepare the sour cream dressing. In a medium-sized mixing bowl, combine sour cream, white vinegar, sugar, dill, and black pepper. Mix until smooth and well combined. Adjust seasoning to taste.

Step 5

If you are using red onion, slice it thinly and set it aside.

Step 6

Once the cucumbers have finished releasing water, rinse them under cold running water to remove the excess salt. Pat the cucumber slices dry with a clean kitchen towel or paper towels.

Step 7

In a large serving bowl, combine the cucumbers and optional red onion slices with the sour cream dressing. Toss gently to coat all the ingredients evenly.

Step 8

Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld together.

Step 9

Serve chilled as a side dish or light appetizer. Garnish with extra dill if desired.
