Ingredients

  • 32 ounces Sauerkraut
  • 1 pound Smoked sausage or kielbasa
  • 4 medium Potatoes
  • 3 medium Carrots
  • 1 large Onion
  • 2 tablespoons Brown sugar
  • 1 cup Apple cider
  • 1 teaspoon Caraway seeds (optional)
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper

Directions

Step 1

Drain and rinse the sauerkraut to reduce its tanginess, if desired. Set aside.

Step 2

Peel and chop the potatoes into bite-sized chunks. Peel and slice the carrots into 1/2-inch pieces. Roughly chop the onion.

Step 3

Cut the smoked sausage or kielbasa into 2-inch pieces.

Step 4

In the crock pot, layer the ingredients: start with the sauerkraut, followed by the chopped potatoes, carrots, and onion. Place the sausage pieces on top.

Step 5

Sprinkle the brown sugar over the ingredients. Add the apple cider and sprinkle with caraway seeds, salt, and black pepper.

Step 6

Cover and cook on low for 6 hours or until the vegetables are tender and the flavors have melded together.

Step 7

Stir gently before serving to combine the flavors. Serve hot with crusty bread or dollops of sour cream, if desired.
