Ingredients

  • 8 pieces large eggs
  • 0.5 cups whole milk
  • 0.75 teaspoons salt
  • 0.5 teaspoons black pepper
  • 2 tablespoons olive oil
  • 1 medium yellow onion, finely diced
  • 1 medium red bell pepper, diced
  • 1 medium zucchini, diced
  • 2 cloves garlic, minced
  • 2 cups spinach, chopped
  • 1 cup shredded cheddar cheese
  • 0.5 cups parmesan cheese, grated
  • 2 tablespoons fresh parsley, chopped (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a 9-inch round baking dish or ovenproof skillet with non-stick spray or olive oil.

Step 2

In a large bowl, whisk together the eggs, milk, salt, and black pepper until fully combined. Set aside.

Step 3

Heat the olive oil in a large skillet over medium heat. Add the diced onion and cook for 3-4 minutes until softened.

Step 4

Add the red bell pepper and zucchini to the skillet and cook for another 4-5 minutes, stirring occasionally, until the vegetables are tender.

Step 5

Stir in the minced garlic and cook for 1 minute until fragrant.

Step 6

Add the chopped spinach to the skillet and cook for 1-2 minutes until wilted. Remove the skillet from the heat and let the vegetable mixture cool slightly.

Step 7

Spread the cooked vegetable mixture evenly across the bottom of the prepared baking dish or skillet.

Step 8

Pour the egg mixture over the vegetables, ensuring that it evenly coats them.

Step 9

Sprinkle the shredded cheddar cheese and grated parmesan cheese evenly over the top of the egg mixture.

Step 10

Bake in the preheated oven for 25-30 minutes, or until the frittata is set in the center and slightly golden on top. You can test doneness by inserting a toothpick or knife into the center—it should come out clean.

Step 11

Remove the frittata from the oven and allow it to cool for 5 minutes before slicing.

Step 12

Garnish with fresh parsley, if desired, and serve warm. Enjoy!
