Ingredients

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 28 ounces diced tomatoes (with juice)
  • 15 ounces tomato sauce
  • 15 ounces kidney beans, drained and rinsed
  • 15 ounces black beans, drained and rinsed
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 0.5 teaspoon cayenne pepper (optional, for heat)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup beef broth

Directions

Step 1

In a large pot or Dutch oven, heat the olive oil over medium-high heat.

Step 2

Add the diced onions and sauté until softened, about 3-4 minutes.

Step 3

Add the minced garlic and cook for another 1-2 minutes until fragrant.

Step 4

Add the ground beef to the pot and cook until browned, breaking it apart with a wooden spoon as it cooks. Drain excess fat if necessary.

Step 5

Stir in the diced green and red bell peppers, and cook for 5 minutes until they start to soften.

Step 6

Add the diced tomatoes (with juice), tomato sauce, and beef broth to the pot, stirring to combine.

Step 7

Stir in the kidney beans and black beans.

Step 8

Add the chili powder, cumin, paprika, dried oregano, cayenne pepper (if using), salt, and black pepper. Mix well to ensure the spices are evenly distributed.

Step 9

Lower the heat to medium-low, cover the pot with a lid, and let the chili simmer for about 45 minutes. Stir occasionally to prevent sticking.

Step 10

After simmering, taste and adjust the seasoning if needed.

Step 11

Serve hot with optional toppings like shredded cheese, sour cream, chopped green onions, or a squeeze of lime. Pair with cornbread or tortilla chips for a complete meal.
