Ingredients

  • 2 cups Fresh pineapple, diced
  • 1.5 cups Fresh cranberries
  • 2 Jalapeños, finely chopped (seeds removed for less heat)
  • 0.5 cups Red onion, finely chopped
  • 1 cups Sugar
  • 0.5 cups Apple cider vinegar
  • 1 tablespoon Fresh ginger, grated
  • 0.5 teaspoons Ground cinnamon
  • 0.5 teaspoons Salt
  • 0.25 cups Water
  • 1 tablespoon Lime juice

Directions

Step 1

1. Gather and prepare all ingredients. Dice the pineapple, finely chop the jalapeños (remove seeds for a milder chutney), and chop the red onion.

Step 2

2. In a medium-sized saucepan, combine the diced pineapple, cranberries, chopped jalapeños, and red onion.

Step 3

3. Add in the sugar, apple cider vinegar, grated ginger, ground cinnamon, salt, and water. Stir well to combine all the ingredients.

Step 4

4. Place the saucepan over medium heat and bring the mixture to a gentle boil, stirring occasionally to ensure the sugar dissolves completely.

Step 5

5. Once boiling, reduce the heat to low and let the chutney simmer for 20-25 minutes, or until the cranberries have burst and the mixture thickens. Stir periodically to prevent sticking.

Step 6

6. Remove the saucepan from the heat and stir in the lime juice. Taste and adjust seasoning if necessary, adding more salt or jalapeño for heat as desired.

Step 7

7. Allow the chutney to cool to room temperature before serving, or transfer to an airtight container and store in the refrigerator for up to two weeks.

Step 8

8. Serve the chutney as a condiment alongside roasted meats, as a spread for sandwiches, or as an accompaniment to cheese and crackers.
