Ingredients

  • 1 pound large shrimp (peeled and deveined)
  • 2 tablespoons olive oil
  • 0.5 cup fresh orange juice
  • 3 tablespoons fresh lime juice
  • 3 cloves garlic (minced)
  • 1 jalapeño (thinly sliced)
  • 1 red bell pepper (thinly sliced)
  • 1 yellow bell pepper (thinly sliced)
  • 1 small red onion (thinly sliced)
  • 0.25 cup fresh cilantro (chopped)
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 avocado (diced)
  • 2 cups cooked white or brown rice (optional, for serving)
  • 4 lime wedges (for serving)

Directions

Step 1

In a small bowl, whisk together fresh orange juice, lime juice, and 1 tablespoon of olive oil. Stir in minced garlic, cumin, paprika, salt, and black pepper. Set this marinade aside.

Step 2

Place the shrimp in a large bowl and pour half of the marinade over it. Toss to coat evenly, cover, and let it marinate in the refrigerator for 10-15 minutes. Reserve the other half of the marinade for later use.

Step 3

While the shrimp marinates, prepare the vegetables. Thinly slice the jalapeño, red bell pepper, yellow bell pepper, and red onion. Chop the fresh cilantro and dice the avocado.

Step 4

Heat the remaining 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the marinated shrimp and cook for 2-3 minutes per side, or until they turn pink and are cooked through. Remove the shrimp from the skillet and set aside.

Step 5

In the same skillet, add the sliced vegetables (jalapeño, bell peppers, and red onion). Sauté for 3-4 minutes, or until they are slightly softened but still crisp.

Step 6

Lower the heat to medium and return the shrimp to the skillet. Pour the reserved marinade over the shrimp and vegetables, stirring to combine. Cook for an additional 1-2 minutes to allow the flavors to meld.

Step 7

Remove the skillet from heat and sprinkle the dish with fresh chopped cilantro.

Step 8

Serve the shrimp medley over cooked rice if desired. Top with diced avocado and garnish with lime wedges on the side for an added burst of freshness.
